Baking for A Peanut Butter Addict: Peanut Butter Chocolate Chip Cookies

I married a man who is addicted to peanut butter. I know a lot of people might think “yeah, I’m addicted to peanut butter too…” but seriously, I cannot believe how much peanut butter Randy ingests. At first I thought it was just a problem he picked up whilst being a starving college student or something. But as I became more acquainted with his family, I realized it’s genetic. His mother and his sister both suffer from the same addiction. When together as a family, they consume ridiculous amounts of...

Alex Honnold on Food

I recently caught up with my friend Alex Honnold on something other than his most recent climbing exploits. While he is constantly pushing the climbing envelope, Alex has also been going through a bit of a food and eating revolution. Many of you know that aside from climbing and everything encompassing the professional climbing lifestyle, a lot of my free time and interest is spent around food. I love eating in the best restaurants Roanoke has to offer! I think I always fancied myself as someone who was really into...

Vegan Basil Pesto

This summer, along with the dreaded zucchini, I've also been getting more basil than I know what to do with in my CSA box. I tried to use it up in creative asian stir frys, resulting in some interesting (a kind way to put disaster) dishes. Inevitably, I would put my tail between my legs and give up, leaving the basil to wilt into a sad black bunch of goo. I hate having food go to waste, especially from my box. I like getting the csa box as a challenge to use...

Making Homemade Granola

I’ve had a solid two weeks at home. It’s been such a treat visiting with friends and family, climbing in Yosemite, and also channeling my inner Martha. There’s a delicate balance for me between soaking up my time at home and getting antsy for my next trip. Luckily this stay was definitely the former.   After experimenting and succeeding with making my own almond milk, I decided to continue my Betty-the-homemaker streak and try my at luck homemade granola. I’m not the biggest consumer of granola, but I do enjoy a bit...

Making Homemade Almond Milk

I've been using almond milk for my main milk substitute for a couple of years now. It has replaced the previous candidates of soy and coconut, and seems to be making itself permanent. It makes par for a baking substitute, and I honestly prefer it on my oatmeal to anything else. Unfortunately, it comes in the tetrapak milk containers. I've always been jealous of real milk drinkers' ability to buy their milk in reusable glass jars. It seems like a simple, environmental way of doing things. There's hardly any waste,...

Dairy Free Travel Food

Hi Beth, Thank you so much for your wonderful blog on your climbing/travel adventures and your recipes. I notice that you travel a lot for your work and know that you have some food allergies and restrictions. How do you make sure you eat correctly when you travel so much? Is there a certain restaurant chain that you can always count on? I too have food allergies, so any info you can pass along would be great. Thanks so much. Crystal   Hi Crystal, Thank you very much for your message. Yes, I do travel...

Vegan Potato Leek Soup

This the season for soups! Or at least it should be. California has had one of the driest winters on record, creating an excellent climbing season but a terrible season for the water supply. Normally I welcome the few months of winter when the skies are dark and dreary and I can warm up with a hot bowl of homemade soup. So, this winter I've improvised and had a hot bowl of soup under sunny skies.   My csa box has been full of potatoes, leafy greens, and leeks lately, making potato...

To the beach

I've never been a beach person, not even as a kid. Maybe it's because I grew up near the not so inviting Northern California coast, or maybe I'm just a solid ground kind of girl. Regardless, I've never really enjoyed the ocean or the beach. Which makes the fact that I just returned from my first trip ever to Hawaii a rare occurrence. It also happened to be my first ever vacation as an adult. Every other vacation has either involved family gatherings or climbing, so I'm pretty sure I...

Chicken Salad (or tofu!)

I've grown to love vegetables. It's been a long, arduous road, but finally I actually crave them. I've come a long way from craving a very diverse diet of different shades of white. My old cravings could have been compared to those never ending track home communities, with differing shades of beige stretching on forever. Mint Milanos, Lays potato chips, and sourdough bread were my go to snack foods. Now, my refrigerator commonly looks like the colorful rainbow leading to the pot of gold.   Unfortunately, I've noticed that when traveling it's...

The French Laundry

As the season for gluttony is in full swing, we thought we'd add one of the most glutinous experiences to our roster of feasts by eating at the coveted French Laundry. It was Theo's graduation trip, which somehow justified the five hours of gorging ourselves on food almost too fancy to eat. Robin's account sums it up perfectly and is head and shoulders above anything I could ever hope to write. Our courses, however, were different, so between the two blogs, you can see almost thirty different courses (minus three of my dessert dishes due to...
